Inniskillin ice wine, recognised as one of the worlds great wines, is truly a winter's gift to wine lovers. Originally developed in a cool climate region of Europe, the climate of Canada's Niagara Peninsula an Okanagan Valley ideally suited to the production of ice wine. The grapes, having already reached their ripeness in October, are left untouched on the vines under a cloak of protective netting until the deep freeze of the Canadian winter. During this time, the grapes are naturally dehydrated by the elements, adding to the concentration of flavours aroma, sugars and acids in the juice. Temperatures dip into minus 10 degrees in December and January freezing the grapes solid. After initiating the arduous task, usually undertaken at night, of harvesting and pressing. The yield of highly concentrated juice is extremely low since most of the natural water content of the juices left behind is in the form of ice crystals, Inniskillin first produced ice wine in 1984, and has consistently received awards and recognition around the world.
