Holm Oak Pinot Gris 2023

2023's cool season presented a wet spring & intermittent summer storms. However, Holm Oak's Pinot Gris was hand-picked at perfect ripeness & pressed straight to tank for minimal skin contact. 20% underwent wild fermentation in older oak barrels, 10% in tank, while the rest was fermented with aromatic yeast for aromatics. The wine was aged in lees for two months to improve mouthfeel & ultimately blended & bottled.

Undeniable notes of pear, citrus & jasmine are found on the nose, with spicy complexity, while the palate bursts with flavor & added weight from wild fermentation. A crisp, natural acidity ties it up in the end.
