This Pet Nat is made from organic Riesling and Chardonnay, carefully pressed and fermented in stainless steel for a natural and cool process. To achieve the perfect balance, fermentation was halted once the sugar and acid harmonized, resulting in a residual sugar level of around 10g/L. The bottle was then sealed with a crown to continue its fermentation, creating a constantly evolving wine. With the addition of yeast lees, this wine offers complexity and flavor. Currently, it boasts bright and juicy flavors with zesty notes from the Riesling. For the ultimate experience, serve chilled as an aperitif.
